Cupcakes are Like Relationships

Totally was my project last night. I baked a bunch of cupcakes for the class and explained how cupcakes and baking them is like relationships. Yes, I brought marriage and cupcakes together. I even took the classic white cupcake and buttercream and likened it to the perfect marriage ( a peer marriage ). According to my teacher I have taken the term down a notch. I disagree there is NOTHING better then a cupcake! I had 2 (quality control you know!)

I took a rest day yesterday because today was…

12 miles. 12 FREAKING miles in the blustery winds and 21 degree weather. Was glorious! I got to see Cassie struggle. Is it bad I enjoy seeing my running partner struggle somewhat? She usually beats my butt and even running a 9 minute mile I wasn’t keeping up with her the first part. I got pity stares from the hard core runners. I may not be hard core, but at least I’m out here. With an aching IT Band to boot. I did catch her at the end and manage to run the last few miles at my pace, but by then I was too exhausted to enjoy it.

Thank you to the poor patrons and workers at Beauty Brands for allowing us to use the bathrooms. They were very upscale. They asked if it was cold (yes) and stared (probably the fact no makeup and hair standing straight up in a beauty salon). We are beautiful… Strong beautiful running chicas! With no makeup and bad hair. Eh it happens when I’m going out for a death march I don’t feel the need to look my best ;)

First time I had done 12 since Nike so it was fun to feel like that again. I MISS the BIG miles when running. You just feel SO strong afterwards and like you can do anything! Which by the way I totally can ;)

I also did yoga this morning, but at 5:30 AM my yoga is just blech. I may end up not doing it next week and going at 10:30 next week. Be more loose when I’m awake for more then 20 minutes! I’m not a good yogi anyways (downward dog can bring me to my knees), but at 5:30 I just want to lay in child’s pose! I am totally in love with half moon right now though so I did manage to hold it together for that.

Tomorrow is Spin and Sunday is a Miranda Lambert concert. HELL YEA! I’m so excited!

This was wrote about Jen so I’m forgiving John for his womanizing ways… This time.

So onto my heartbreak of the day

MY waffles stuck… and wouldn’t come off the waffle iron… at all. So it was KOed and is now in the trash. What does this mean?

NO MORE PUMPKIN WAFFLES! UM YES THIS IS A CRISIS OF EPIC PROPORTIONS.

Harumph as soon as my teachers decide not to make class mandatory I’m hoofing it to the store to get another one.

I did salvage some waffle pre-stick.

These are waffle pieces because it stuck.

What is with the sticking waffles? Is it the recipe, my waffle maker? JEEZ can’t a girl just eat a waffle?!

The rest of my eats were leftovers, but tons of fruits and veggies. Why? Because I am determined to look like this

Any one of them really… Not picky.

And to repent for my chip and chocolate chip eating ways.

I went to spinning this AM (Intervals gag me w/ almost no rest! SOO hard I was dying!)

And then yoga where we did a pose that was DEFINITELY not a yoga pose more strip tease… Sorry, but for this girl it was a bit much I was collapsing with laughter.

I am going to try to cut out the little handfuls of junk I keep grabbing when I’m in the kitchen. Chips and chocolate chips and crackers. I want to get my best time possible in St. Louis and it is time to really crack down on the diet and try to gain some strength before the miles pick up. Yoga is for strength and spinning is for the endurance.

I’m ready to push it and crack down. Become a serious athlete ;)

Rudolph is on the original and I must watch because I’m a little Christmas obsessed right now!

Supposed to be below freezing all day tomorrow, it will test my will and desire to be an athlete because I can’t run on the treadmill and tomorrow is a run day!

Trying To Figure This Out

Sorry to be MIA, but I’m trying to decide how to come back to the blog.

Food blogging is really difficult for me because I don’t eat that exciting. Most of my food is the same and pretty boring so I think I will just use this to say generally what I ate if it something spectacular put it on the blog.

I will be blogging more about my running because I am OFFICIALLY training for my first marathon! It will be the second weekend in April with my amazing running partner who beats my butt every long run. As in I chase her the whole way!

Last week we swore we heard a cougar in the woods (We knew they had been spotted out there) and then we heard gun shots so we booked it out of those woods. I’m still dead convinced we cheated death, but we are probably going back there this weekend. Closest good running trail. Needless to say though we were little a goofy that run. Hiding behind each other and just freaking out. Only runners out there on a gorgeous day!

Yoga kicked my butt on Sunday because the instructor decided to make me perfecto that class (doesn’t help I was right in front of her) so I am now SORE. I am going to add in another day of yoga because I LOVES it.

Spin is hard, but went well yesterday working on endurance and intervals. UUUGH so hard! I felt like throwing up or collapsing at the end yesterday!

Today was a 5 mile run! It is Dec 1st in KC and I needed shorts and a t-shirt. WOW if this is global warming I think I like it! It was a tough run, but it was fun to do. I LOVE this weather and it’s supposed to get down to below freezing later this week.

My eating is slowly detoxing back into pre-holiday splendor. I made Snobby Joes yesterday they are OK but way too sweet for me. Next time I’d leave out the maple syrup.

I will put pictures up of our gorgeous tree etc. tomorrow, but I wanted to get on this saying I am alive, just rethinking the blog. I think when starting a blog it’s all about experimenting about what works. Although I am passionate about food, I am more passionate about working out right now. So I want my blog to focus on that more. I need a place to shout my accomplishments, ask questions and just chill.

Hopefully I still have a few readers left that are willing to bear with me as I find a blogging voice.

One Stuffed Girl!

Sorry guys my eats have been boring, but numerous. The thought of putting them on the blog is terrifying. I’m trying to remain in denial about the copious amounts of food I have consumed in the last 2 days! I do promise to return to food blogging soon to hold myself accountable!

We are getting ready to decorate our gorgeous tree and I can’t wait to put up pictures! The colors of the year are lime green, red and black and white. It should be fun. We are doing some whimsy ala Dr. Seuss so should be fun :)

I have been trying to decide my spring race schedule and if all goes according to plan I will be running a full marathon in February. And a half in April. Possibly Dam to Dam in Des Moines, but with me moving in May I don’t know if I will get back up here to do that.

I saw the movie The Blind Side yesterday. GO SEE it! Sandra Bullock is amazing and the story is so sweet as someone who has always considered adopting this story definitely makes you realize the huge impact you can have in this world. It is uplifting, family friendly and shows a strong woman. A rarity in the movie world that I strongly dislike! We women are mighty and strong, we can do as much good in this world. It shows you how people surprise you and how one action can change someone’s life. Just have a little faith :)

Sorry for the short post, but I’m exhausted and not feeling well ( possibly attributed to the amount of food I’ve consumed, but I’m refusing to accept it!) so going to go reread The Time Travelers Wife and enjoy a break from the internet. I will be back to full posting Sunday or Monday I promise, but right now I need a tech break (I am even grounding my phone as much as possible).

What Is a Vegan?

Dad: Are you making that for everyone or yourself?
Me: It has butter in it so for you guys…. I think your confused over what vegan is.
Dad: No, it means that you eat food that tastes bad.

LOL As you can see my dad is a meat and potatoes guy. Has no desire to eat vegan, vegetarian or flexitarian. He is lover of all things Pioneer Woman and Paula Deen (as in add butter and it will be perfect!). I strongly disagree that my food tastes bad.

I had leftover pancakers for breakfast with peanut butter.

Lunch was tofu dipped in BBQ and sweet potato fries.

Then various chips, pretzels, a Luna bar and some cocoa roasted almonds. Gah I grazed all day :(

I purged my room and took out a trash bag full of old clothes, my swimsuit that won’t cover my butt and never should have been worn, and various papers from school that I never needed so no idea why I have them?

And in light of keeping the kitchen clean except for Thanksgiving related tasks. I went to Panera for dinner.

Chicken Fuji Apple Salad minus the chicken and cheese. The lady kept asking you don’t want chicken… or cheese?! Well no, no I don’t, but thank you for asking. The dressing was superb.

Since it was a Take 2

Black Bean Soup… I was craving Vegetable, but this is my second favorite kind at Panera. I had half a baguette with it.

Then I baked….

Carmelitas for them. Pecans, chocolate chips and caramel sauce are the topping with a crumb bottom and crumb top. They love it and if I recall it is quite delicious.

And for me

Vegan Pumpkin Waffles… Yummy. I ate myself sick on them. I also have batter in my hair stuck on my face. I am not a clean baker by any means. I sling batter everywhere!

Tomorrow it’s pies, mashed potatoes, Pioneer Woman Cinnamon Rolls, turkey and who knows what shenanigans will be created in the kitchen.

Workout for the day was a 3 mile run in which my Ipod died and I got wet and wind blown. My face is actually peeling from the wind (true story) and my lips are a cracked mess.

What are you winter beauty tips girls (and guys don’t want to exclude you) for chapped lips and peeling faces? The windburn hurts! And the salty sweat ouch ouch ouch!

P.S the quote yesterday was from Runaway Bride :) Something I could probably be someday so don’t report me to the news if I hop on my horse and take off.

This woman is about as subtle as a gun!

I heart the Proposal :)

Swoon yes I’m a sucker for romance. My love life is pretty much on pause so I feel the need to get my romance from a chick flick. They do it better anyway.

I didn’t sleep like at all last night. Brain would NOT shut off so I got about 4 hours of sleep and popped out of bed for spin.

Spin was working on cadence and speed. It was supposed to be a rest day. Yeeeeea right…. It was harder then resistance! I am not a fast runner, and certainly not a fast spinner. I just don’t move that fast! So it was a struggle of an endurance ride, but I’m so glad I did it. I definitely felt stronger by the end.

Lunch was another one of these

Amy’s Roasted Vegetable slathered in marinara. Yum Yum I had half.

And then I tried some Emerald Cocoa Roasted Almonds. Delicious! I don’t love the ingredient list, but I did love the taste. Chocolatey and almondey. Two great flavors.

Dinner was beige

Tofu, rice and broccoli.

Finished off with

PB Banana Soft Serve with chocolate chips. So decadent and filling. I definitely won’t be eating again tonight!

I decided to do Friendship Bread for my Project unless someone has a fantastic idea. The class isn’t that bad, but it’s just tedious!

Blame Twilight!

Sorry to be MIA lately. Between holidays and the last few weeks of class I am swamped. So here is what is going down on the blog.

I WILL blog every night or early am. No excuses.

I won’t be blogging Saturdays. I need a day away from the internet and for me Saturdays are my busiest. I will do a 3 day recap Sunday nights for you guys.

I hope this works and prevents burn out.

Now onto eats.

Ezekial english muffin with squash and marinara.

Pasta with marinara and broccoli.

Banana PB softserve. Best idea ever put PB in with the bananas in the food processor. Heaven in a bowl.

Half an Amy’s Roasted Veggie. Best pizza ever just not very filling. I added marinara, but should have added more veggies, but I was going to eat my arm off if I didn’t eat something.

Sunday had no eats warranting photographing. It was a horrible day of grazing.

Friday was Power Yoga. I LOVE yoga.

Saturday was an adventure filled 10 miles. We ran on the sidewalks/road and didn’t realize how much construction there was. We ran through mud, stop lights everything. Got honked at and stared at. It was a different kind of run. We sprinted between stop lights so it was a faster 10. I was covered in mud when I was finished. LOL And we ran through a Burger King drivethrough. It was HILARIOUS the looks we got! We didn’t get anything just used it to get back on the sidewalk!

Sunday was yoga nice and stretchy. It was lovely and definitely my most successful bout of yoga yet.

And what else happened? I finished both Twilight and New Moon. I’m a fast reader ;) I am not entirely sold on it. Edward is NOT my favorite guy at all. If I had to pick I’m Team Jake, but I don’t know if I like either! I’m going to finish the series though, but it may have to wait until Christmas because I got NOTHING done all weekend. Every free moment was spent reading! It was nice to take a break from the net though and read a real book, but just didn’t do much for me getting my HW done!

Speaking of

Any ideas of how to creatively display our knowledge of the subject matter we’ve learned in Individual and Family Relationships? I am as lost as Britney right now!

And movies were watched.

I love this scene! I have always wanted to try just laying there and watching the stop lights change. Sigh I would give anything for a Noah! He’s my dream guy no question at least in the personality. Who doesn’t love a guy who will read to you, die with you and build your dream house while STILL challenging you?! I love a good fight ;)

And now I’m leaving you all (And sparing you more blogging boringness) to be with this man. Now if I could pick looks this is my guy. He is also a runner as you may well know. A good one too.

Really who doesn’t want to be in bed with him? ;)

So now I’m out my weekend was filled with grazey food, amazing workouts and some seriously romantic men.

I Rock, You Rock, We Rock

I am SO sorry guys between holidays and school I’m sporadic at best with the blogs! I AM reading everyone’s but I want to leave quality comments and I don’t always have time to respond to them all the way I’d like! Thank you for your patience!

So onto the day.

Breakfast was just pb and a pancake with pretzels to fuel a run.

5 miles to be exact! In this beautiful November sunshine, no wind and not a cloud in the sky. Twas tre magnifique.

I thought I was dying at the end and I was kicking myself for being so out of shape. Then I looked at my Garmin and saw it was 2 whole minutes faster then my last 5 miler. Isn’t it funny how as runners 2 minutes is a huge time frame? I was on a runner’s high after that let me tell you. I even forgot to take my mid afternoon nap. SHOCKING!

Since this run wasn’t started until far later then it should have been, I ended up just grazing my way through lunch.

I came home from class where I apparently ate this

Kashi and some off brand honey nut cheerios with soy milk.

Hungry for carbs I say. I’m a little carb monster!

Then I made these for dinner

My version of Mama Pea’s Red Lentil Green Enchiladas. Meaning I used less ingredients and jarred jalepenos.

Slathered in soy yogurt and salsa.

Totally rocked my face off so I had two. Yea I said it two. Hungry Hungry hippo ( I always rocked at that game must have been a sign!)

So I rock because I ran my 5 miles in a crazy fast time for me (46:30 if you’d like to know).

Miss Anna rocks because she is doing Gobbler Grind this weekend.

Miss Ashley rocks because she is doing her first marathon!

AND

Miss Katie rocks because she is raising so much money with Operation Chocolate Covered Kindness.

Guess Who’s Back Back Back??

Tell a friend. Yes, I’m back!

Sorry guys I don’t like rules. And the number one rule of blogging is posting at the same time every day, but I don’t like conformity or sameness. It’s boring right? Probably why I refuse to ever have a desk job or a job with predictability.

I went to spin class yesterday and 4 minute intervals are amazing. Jelly legs which could lead to an accident when trying to get down the stairs if you don’t hang on to a wall.

I ate a little too good yesterday. Let’s start after spin class shall we?

Vegan pancakers with Earth Balance. Nom Nom best vegan pancakes I’ve had.

Bet you can’t guess where I got the recipe ;)

And I subbed Whole Wheat Pastry Flour for the All Purpose. Gotta make them healthier right?

Lunch was meh. Just Tofu and a sweet potato. I usually have at least one boring meal if not two and sorry dudes and dudettes lunch wasn’t where it was at.

Dinner was easy because I was famished and knew that if I didn’t get food RIGHT THEN it was going to get ugly in here.

Black Bean Burgers

I added Gates BBQ, Mushrooms and Onions to mine. Why? Well who can really tell what goes through my brain. Usually, if I see it I eat it. I’m such a complicated woman.

Um yea I started with the one and finished the other not too long after. Much better then a Reeses plus totally vegan. Worth the splurge. I sucked it down like Edward wants to suck Bella’s blood down. OK so totally not gonna try there I don’t know a thing about Twilight just names, so is it a faux pa to try to look in the know?

well, It’s gorgeous out like it definitely shouldn’t be in November. No wind, sweatshirt weather and THE SUN IS BACK. So I’m going to go hang with the pup outside with a tennis ball. Play a little fetch you know.

But, first I must say Johnny Depp was a fine man to pick for sexiest man. Oh so sexay. And a great guy helps out the less fortunate, treats waiters well (Do you remember the huge tip he left in Chicago) and is a great father.

I was going to run 3 miles yesterday.

Totally wimped out and didn’t. I just couldn’t stomach being soaked again.

Bring on the snow somehow that seems better then rain at the moment? Which do you prefer?

My eats were about as blah as the weather.

One bright spot (like the sun I see peeking over the clouds mocking me right now!)

Quinoa, black bean and mushroom stuffed red pepper. So filling ( I ate about 2/3) and delicious. Vegan with a Vengeance put it on your Christmas list you want this book!

I watched my first Christmas Special last night. Merry Madagascar. Good well no, but it was Christmasy and I needed Christmas cheer.

I also watched KU barely hold off Memphis. Oy Vey what is with our offense? Could we hit the broad side of a barn? Thinking no.

I am going to start this

Last one on the band wagon, but with my new internship I do think I need to know about it. So as soon as my brother gets it from his girlfriend I will begin the Twilight series.

I also got a good phone call, I am moving for the summer. Beyond excited :)

My day today revolves around typing and organizing recipes, cleaning and making labels plus a board meeting. Aren’t you jealous? I so would be!

And to answer a few comments.

Yes, I was a riding a couple of horses for people I am not right now. I didn’t want to make it into a chore, just want to ride when I want to :) Because well I hate being forced to do annnything it’s just my way. I’m a bit hardheaded ;)

I showed for quite a few years big shows and little.

Here is me and Stevie at my last show 2 1/2 years ago (has it really been that long?!)

I don’t show anymore and do not have a horse. I sold my last one

Daisy in May. Taking a break from the horse world to focus on school and running.

Someday I do hope to own another as special as Stevie was, so I do want back into horses. Right now it’s just really tough!

It’s a fun hobby though and I still have lots of friends with horses if I do want to ride.

Sorry for the randomness it’s been rainy and blah here. Here’s to hoping for more rain and sunshine!
